We’ve done the leg-work for you: no need spend any time planning out back-to-school lunches. We’ll be posting a new lunch every day.
The best news is that each of the lunches is filled with omega-3 fatty acids, vital for healthy brain function. Enjoy!
•Egg Salad Mini Pitas with Omega-3 Enriched Mayo and Crunchy Sprouts
Put four omega-3 eggs in saucepan and cover with cold water. Bring to a boil. Cover and remove pan from heat and let sit for 10 minutes. Drain water and transfer egg to a bowl filled with ice and water. After 5 minutes, peel eggs and chop up with a fork mixing in 3 tbsp mayo. Add 1 finely chopped stalk of celery. Make 6 mini pitas with egg filling and a handful of sprouts.
•Salted edamame cups
•Extra Special Banana with Chocolate Dip
Fill a tiny container with chocolate syrup. Dip the banana in chocolate. Yum.
•Frozen Soy Milk Fruit Smoothie with Flax and Frozen Blueberries in a Thermos
Purée soy milk with 1 tbsp ground flax and ½ cup frozen blueberries. Add 1 tsp of honey to taste. Fill a Thermos ¾ full. Leaving lid unsealed, freeze overnight. Smoothie with be drinkable by noon.
