My girl loves to bake. So when I saw this recipe for rainbow cupcakes in FamilyFun Magazine, I knew this would be a project we could both sink our teeth into. The directions are simple. The clean-up is not. But, oh well.
1 Make one white cake mix per instructions. Divide the prepared batter into six bowls.
2 Add food colouring to each bowl of batter so that you have a bowl each of purple, blue, green, yellow, orange and red. Add more for intense colours or less for pastel.
3 Line a 16-cup muffin pan with paper liners and begin spooning an equal amount of batter into each, building layers. Purple, than blue and so on.
4 Cook according to directions or until toothpick comes out clean. Cool, remove the wrapping and frost with whipped cream or vanilla icing.
Honestly—they turned out amazing. Some had thicker layers than others, but the effect was still beautiful. Very tie-dye. Charlotte wants to forgo a cake and make these for her next birthday party.
