Easter Cookie Ball Eggs


The Ingredients:

  • One box jelly-centered sandwich cookies
  • 2/3 cups strawberry cream cheese
  • Coloured coating chocolate


The How To:

1 Mix cookies with cream cheese in the food processor. Chill for 30 minutes.

2 Make bite-sized egg shapes using about 1 1/2 tablespoons of batter. Insert a colourful straw into one end. Chill one hour or freeze for 30 minutes.

3 While chilling, melt a variety of colours of coating chocolate over a double boiler (or a bowl over gently boiling water) until just melted. Do not overheat or chocolate will seize up. Dip eggs in chocolate and stand in a cup until chocolate hardens. Use a sandwich bag with the corner cut out decorate eggs as desired with remaining chocolate.
