Pork Chops with Balsamic Plums and Swiss Chard
Use pork chops of similar thickness and size to ensure uniform cooking. Frenched pork loin chops are a great tender cut for this recipe. "Frenched" refers to a chop that has been hand trimmed to remove any excess meat or fat at the tip of the bone. Look for them at your butcher's counter in larger supermarkets. Pork loin butterfly chops would also work well in this recipe.
