*Kamut: A Kitchen Lesson Kamut is an ancient grain that is part of the durum wheat family. It has a sweet, nutty flavour, and is about 40 percent higher in protein, vitamins and minerals (magnesium, zinc, vitamin B, E and unsaturated fatty acids) than traditional wheat. Kamut also has much more selenium, a natural antioxidant proven to lower the risk of some cancers. If that’s not enough, most people with wheat sensitivities can digest it because it’s not genetically refined. Kamut’s growing popularity has made it a trendy diet staple, so look for it in breakfast cereals, baked goods and pasta.
