10 Quick School Night Suppers

We know it can get pretty hectic when the kids come home from school. Between getting them ready for soccer practice, ballet class or piano lessons, it’s hard to have time to make a nutritious meal. We’ve compiled 10 of our favourite recipes that take 15 minutes or less to make and are as healthy as they are tasty!

Mini Veggie Sushi


This easy-to-do recipe will banish the plain veg and dip forever. Switch this one up with hummus or other thick dips to keep it new every time.

Serves: Makes 24 rolls

Time: 10 minutes

Ingredients

  • 1 English cucumber
  • 1 carrot, peeled and shredded
  • ½ cup cream cheese
  • 1/4 cup raisins
  • chives (to secure rolls closed)
  • Directions

    • Using a peeler, slice 8 lengthwise slices of cucumber about 1/8? thick. Cut each length into 3 pieces. (Note: the exact amounts can vary based on size of cucumber.)
    • Put a small amount of carrot at the end of each cucumber slice. Add a small spoon of cream cheese then press a few raisins into it.
    • Roll up cucumber keeping filling carefully inside. Tie with a chive to secure.
