Makes 12 crepes (Freeze extras, separated with waxed paper, in a resealable freezer bag.) Combine 2 small canned beats with ½ cup flour, ½ cup beet juice (from can), 1 egg and 1 tbsp melted butter in a food processor. Heat a 6" skillet over medium heat and spray lightly with oil. Pour about 3 tbsp batter into pan and rotate to spread batter evenly. Flip after 2–3 minutes and cook for another minute. Spread cream cheese over crepe and top with slice of turkey.
