Toss grated carrot with vegetable oil and orange juice and a pinch each of salt and black pepper.
Lay a large Boston lettuce leaf on a plate, then spoon carrot mixture onto leaf to form a nest shape.
Use a melon baller to scoop 3 “eggs” from chilled, firm herb-flavoured cream cheese.
Arrange eggs in nest; serve at once.
