Popped Amaranth Seeds

Often used as a home remedy for premature grey hair, amaranth is good for some many other reasons. Use popped amaranth as a crunchy topping on salads, in a granola bar recipe, or as a fun picnic snack. You can top the popped amaranth with seasonings, but we think the nutty flavour is yummy enough on its own.     Heat a dry skillet. Throw in a few amaranth seeds. If they pop right away, the pan is hot enough; otherwise wait a minute or two.

  • 2.

    Sprinkle 1 tablespoon of seeds in pan and cover (preferably with a glass lid). Shake pan around. When the majority are popped, transfer into a bowl. Repeat.

  • 3.

    If you are not growing your own amaranth, you can find the seeds at health food stores or in the organic aisle at your local grocery store.
