Makes 24 tacos
Prep Time
Prep: 5 minutes On the table: 10 minutes
Ingredients
  • 24 scoop-shaped nacho chips
  • 1/2 pkg seasoned ground soy
  • 1/4 cup chunky salsa
  • 1/4 cup shredded Mexican blend cheese
  • Directions
  • 1.

    Preheat oven to 400-deg. F.

  • 2.

    Spoon one spoonful of soy mixture into nacho cups. Top with a dollop of salsa and some grated cheese.

  • 3.

    Bake about 5 minutes or until cheese is melted and bubbly.

  • 4.

    Serve immediately with additional salsa. Garnish with cilantro leaves, sour cream and lime wedges, if desired.

      Awesome to see soy being used for this recipe instead of beef! Usually us vegetarians have to alter recipes, but it’s refreshing to see something we wouldn’t have to alter, but also give meat-eaters a new alternative to try!
