Ingredients
  • 4 large baking potatoes, 2 lbs total
  • 1/2 cuptomato sauce
  • 24-40 slices pepperoni
  • 1 1/2 cups grated mozzarella cheese
  • Directions
  • 1.

    Preheat broiler.

  • 2.

    If using cooked potatoes, go to step 4.

  • 3.

    With a fork, pierce potatoes a few times. Microwave on high for 5 minutes. Turn over and cook for another 3 minutes or until tender.

  • 4.

    When cool enough to handle, cut potatoes in half lengthwise. Scoop out potato flesh, leaving a 1/3-inch border. Save scooped-out potato for another use. Set potatoes on a sheet pan.

  • 5.

    Spread 1 tablespoon of sauce over each potato. Top with pepperoni and grated cheese.

  • 6.

    Broil about 5 minutes, or until cheese melts and turns light golden brown.
