Cherry Chocolate Chip Cookies

Dried unsweetened cherries are a great recipe booster: Plump them up with hot water and add them to a sauce for grilled duck breast or rack of lamb. They also make for a great snack on their own

Ingredients
  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1 cup dried unsweetened cherries
  • 6 ounces semi-sweet chocolate chips
  • Directions
  • 1.

    Preheat oven to 350 deg. F.

  • 2.

    Cream together 1/2 cup butter, 1/2 cup sugar and 1/2 cup packed brown sugar.

  • 3.

    Beat in 1 egg and 1 tsp vanilla.

  • 4.

    Mix together 1 1/2 cups all-purpose flour and 1/2 tsp baking soda in another bowl. Add it to the butter mixture and mix until combined.

  • 5.

    Mix in 1 cup dried unsweetened cherries and 6 oz semi-sweet chocolate chips. Drop spoonfuls of dough onto a parchment paper-covered sheet pan, leaving 2 inches between each cookie.

  • 6.

    Bake for 10-12 minutes or until cookies are lightly golden brown. Let cool on pan to firm up then transfer to rack.
