Yummy Bacon & Cheddar Waffles

Here's a twist on a breakfast favourite that kids will surely love - even for dinner. Wrap them up and take them with you when you need to eat on the run.

Ingredients
  • 1 3/4 cup all-purpose flour
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 1 1/2 tsp salt
  • 2 eggs, separated
  • 1 3/4 cups milk
  • 3 tbsp vegetable oil
  • 2 cups coarsely grated sharp cheddar
  • 6 slices bacon, cooked, drained and roughly chopped
  • maple flakes* or maple syrup for serving
Directions
  1. Preheat waffle iron to medium high.

  2. Whisk flour, sugar, baking powder and salt together in a bowl and set aside.

  3. In a separate bowl, whisk egg yolks, milk and oil together. Add flour mixture and stir until just combined. Stir in bacon and cheddar, being careful not to over-mix.

  4. Beat egg whites in a small bowl until stiff but not dry. Fold whites into batter.

  5. Spoon 1/2 cup batter into waffle iron. Close and cook until golden and crisp, about 5-6 minutes. Repeat with remaining batter.

  6. To serve, drizzle with maple syrup, or for a crunchy alternative, sprinkle with maple flakes.

(1 waffle): 216 calories, 9.9 g fat, 178.0 g fibre, 8.6 g protein; good souce of thiamine, riboflavin, folate, vitamin B12 and calcium.
