Sauté vegetables in oil over medium heat in a heavy-bottomed saucepan until translucent and softened.
Add smoked meat, stock, peas, bay leaves and thyme. Bring to a boil, cover and reduce to a simmer (should be gently bubbling) for 20 minutes or until peas are softened.
230 calories, 7 g fat, 20 g protein, 24 g carbohydrates, 4 g fibre. Excellent source of vitamin A.
