Ingredients
  • 1 cup chopped onion
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 tablespoon canola oil
  • ½ pound deli Montreal smoked meat, diced
  • 4 cups chicken stock
  • ½ cup dried yellow split peas
  • 2 bay leaves
  • ½ teaspoon dried thyme
Directions
  1. Sauté vegetables in oil over medium heat in a heavy-bottomed saucepan until translucent and softened.

  2. Add smoked meat, stock, peas, bay leaves and thyme. Bring to a boil, cover and reduce to a simmer (should be gently bubbling) for 20 minutes or until peas are softened.

Nutrients Per Serving

230 calories, 7 g fat, 20 g protein, 24 g carbohydrates, 4 g fibre. Excellent source of vitamin A.
