Warm Cider-Baked Apple with Vanilla Sour Cream

Ingredients
  • ½ teaspoon vanilla extract
  • ¼ cup sour cream
  • 2 Royal Gala apples, whole and cored
  • 2 tablespoons unsalted butter
  • 2 tablespoons brown sugar, plus 1 teaspoon for garnish
  • ½ cup apple cider
  • Directions
  • 1.

    Preheat oven to 350°F.

  • 2.

    In a small bowl, combine vanilla and sour cream.

  • 3.

    Fill each apple with 1 tablespoon each butter and sugar. Set apples in a small baking dish and pour in cider.

  • 4.

    Bake uncovered for 45 minutes or until apples are very tender.

  • 5.

    Serve in a shallow bowl with any remaining cider. Top with sour-cream mixture and sprinkle with brown sugar.
