Preheat a grill to high heat.
Combine first four ingredients together in a bowl, season to taste with salt and pepper and set in refrigerator to chill.
Combine turkey, onion, parsley, mustard, 1 teaspoon sea salt, Worcestershire sauce and Tabasco sauce in a bowl and gently blend until mixture just comes together. Divide turkey mixture equally into 4 balls and form each ball into a patty about ½-inch thick.
Oil grill and cook turkey patties, turning once until cooked through, about 4-5 minutes per side. Lightly brush cut sides of buns with olive oil and place cut side down on grill until toasted, about 20-30 seconds. Place cooked patties on burger buns and top each with a spoonful of peach salsa and a bunch of sprouts, if desired.
