Spicy Calabrese & Pepper Pasta

Ingredients
  • 3 tablespoons olive oil
  • 1/2 onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon chili flakes
  • 100 gram or half of a spicy Calabrese dry sausage, halved lengthwise then sliced into half moon slice
  • 1 red bell pepper, sliced
  • 1/2 orange bell pepper, sliced
  • 1/2 yellow bell pepper, sliced
  • 450 gram spaghettini pasta
  • 70 gram shredded parmesan cheese
  • 11 bunch of parsley, chopped
  • Directions
  • 1.

    Cook pasta, following manufacturer's instructions.

  • 2.

    While pasta is cooking, coat the bottom of a heavy pot with olive oil. On medium heat, add onion, cooking for 2-3 minutes.

  • 3.

    Add chili flakes, garlic, and Calabrese sausage. Cook for approximately 30 seconds.

  • 4.

    Add peppers, cooking for several minutes until tender.

  • 5.

    Add cooked pasta to pot along with shredded parmesan cheese, parsley, and 1/8 cup of pasta water (or more if necessary).

  • 6.

    Add salt and pepper to taste.

  • 7.

    Serve this with garlic bread and a side salad.
