Bring a large pot of salted water to a boil and cook soba noodles for 5 minutes or until just tender. Immediately drain and rinse well under cold water.
In a small bowl whisk together garlic, ginger, Thai chili, soy sauce, mirin, rice vinegar and sesame oil.
Combine noodles with green onions, cucumber, red pepper and shrimp.
Drizzle noodles with vinaigrette and toss to combine. Noodles can be covered and chilled until ready to serve.
Top each serving with 1 tablespoon of chopped cilantro and 1 teaspoon black sesame seeds.
Nutrients per serving: about 470 calories, 8 g fat, 23 g protein, 78 g carbs, 1 g fibre. Excellent source of vitamins A and C, folate and iron.
