Soba Noodle Shrimp Salad

Ingredients
  • 1 package 13-oz soba* noodles (3 bundles)
  • 1 teaspoon minced garlic
  • 1 tablespoon finely chopped ginger
  • 1 Thai chili, finely chopped
  • 1/4 cups soy sauce
  • 2 tablespoons mirin*
  • 2 tablespoons rice vinegar
  • 2 tablespoons sesame oil
  • 1/2 cup thinly sliced green onions
  • 1 small English cucumber, peeled and cut into long strips
  • 1 red pepper, diced
  • 24 black tiger shrimp, peeled, deveined and cooked
  • 4 tablespoons chopped cilantro
  • 4 teaspoons black sesame seeds
  • *Soba Noodles:Japanese noodle made of buckwheat and wheat flour
  • *Mirin: A sweet rice wine. If you don't have it, substitute an equal amount dry sherry, vermout, white wine or sake and a pinch of sugar
Directions
  1. Bring a large pot of salted water to a boil and cook soba noodles for 5 minutes or until just tender. Immediately drain and rinse well under cold water.

  2. In a small bowl whisk together garlic, ginger, Thai chili, soy sauce, mirin, rice vinegar and sesame oil.

  3. Combine noodles with green onions, cucumber, red pepper and shrimp.

  4. Drizzle noodles with vinaigrette and toss to combine. Noodles can be covered and chilled until ready to serve.

  5. Top each serving with 1 tablespoon of chopped cilantro and 1 teaspoon black sesame seeds.

Nutrients per serving: about 470 calories, 8 g fat, 23 g protein, 78 g carbs, 1 g fibre. Excellent source of vitamins A and C, folate and iron.
