Smoked Ham and Cheese Polenta

Filling, bright and delicious, this cheesy polenta is a nice light supper when served with a salad, or a great side dish.

Ingredients
  • 2 Cups water
  • 1 Cup tomato juice
  • 1/2 teaspoons salt
  • 1 Cup quick-cooking polenta*
  • 1/2 Cups chopped smoked ham
  • 1/4 Cups frozen baby peas
  • 1/3 Cups grated gruyere cheese
  • freshly ground pepper
  • Directions
  • 1.

    In a large pot, bring water and tomato juice to a simmer.

  • 2.

    Add salt to the simmering liquid and pour in polenta in a steady stream, stirring constantly with a whisk. Cook for 3 “ 5 minutes, continuing to stir constantly, until polenta is thick and smooth.

  • 3.

    Stir in ham, peas and cheese, reserving 4 teaspoon to sprinkle.

  • 4.

    Divide polenta between 4 serving bowls. Sprinkle each serving with 1 teaspoon cheese and freshly ground pepper to taste. Serve warm.
