Ingredients
- 4 ounces sliced small fresh mushrooms
- 1/2 Cups each diced red, green and yellow peppers
- 1/2 Cups each diced celery and red onion
- 1/2 Cups quartered cherry tomatoes
- 2 tablespoons minced jalapeno peppers
- 2 tablespoons olive oil
- 1 tablespoon lime or lemon juice
- 1 clove garlic, minced
- 1/2 teaspoons each cumin and chili powder
- 1/4 teaspoons each salt and pepper
- 11/4 Cups minced cilantro
Directions
In a large bowl combine mushrooms, coloured peppers, celery, onion, tomatoes and jalapeno peppers. In a measuring cup or small bowl whisk to together oil, lime juice, garlic, cumin, chili powder, salt and pepper. Pour over vegetables and marinate at room temperature 1 hr or refrigerate to marinate longer. Spoon over omelets, grilled fish or meat.
