Rice Soup with Harissa and Lamb

Flavourful and filling, this hearty soup contains fresh veggies, chunks of tender lamb and a North African spice mixture called harissa.

Ingredients
  • 2 tablespoons olive oil
  • 3/4 Cups rice
  • 1 tablespoon harissa spice mix*
  • 2 pounds lamb, cubed
  • 1 Cup onion, chopped
  • 1 tablespoon of minced garlic
  • 1 can tomato paste
  • 1 Cup celery, diced
  • 2 carrots, diced
  • 1 Cup green peas
  • 15 Cups water
  • Directions
  • 1.

    Add oil to a deep pan over medium-high heat. Add onion and cook until lightly browned and softened, 5 to 6 minutes.

    Add the lamb pieces, salt and pepper, tomato paste, harissa, garlic, and 1 cup of water. stir and cook for 4 to 5 minutes till you have a thick mix.

    Add remaining water, and bring to a boil. Add rice and all other vegetables. Stir frequently and cook for about 7 to 8 minutes (till desired tenderness of rice is reached), adding more water if necessary. Adjust salt to taste and serve in small bowls.
