Quick Thai Chicken Pizza

Not a typical pizza, this dinner is easy to make and has a light delicious Thai flavour.

Ingredients
  • 1 boneless skinless chicken breast
  • 1 Cup skim milk mozzarella cheese
  • 1 Cup shredded carrot (packaged ok)
  • 1 Cup bean sprouts
  • 4 whole wheat large tortillas
  • 2 tablespoons olive oil
  • 2 teaspoons sesame oil
  • 2 tablespoons tahini paste (look for this in the peanut butter section of the supermarket)
  • 2 green onion
  • 2 teaspoons sesame seeds
  • Directions
  • 1.

    Heat oven to 375ºF.

  • 2.

    In microwave oven container cover chicken breast with 1 tsp sesame oil, cook according to microwave directions.

  • 3.

    Remove and let sit while preparing crust.

  • 4.

    On large cookie sheet, sprinkle 1/4 cup cheese over 2 tortillas, top with additional 2 tortillas. Cook in oven for 5 minutes.

  • 5.

    Remove from oven when cheese has melted, spread each tortilla with 1 tbsp of olive oil and 1 tbsp of tahini paste.

  • 6.

    Dice chicken and divide on two tortilla pizzas.

  • 7.

    Divide remaining cheese, pop back in oven for approx 7-10 minutes until melted.

  • 8.

    Sprinkle shredded carrots and sprouts on top of pizza.

  • 9.

    Top with chopped green onions and sprinkle 1 tsp sesame oil and 1 tsp of sesame seeds on top of each pizza.
