Quick Mediterranean Pizza

This fast take on pizza uses a round Italian-style flatbread for its base and pesto - a flavourful Italian condiment of basil, olive oil and garlic - for the sauce.

Ingredients
  • 12-inch (30-cm) round Italian-style flatbread
  • 1/3 cup (75 mL) pesto
  • 1/2 cup (125 mL) crumbled feta cheese
  • 1-1/2 cups (375 mL) sliced mushrooms
  • 1 seeded and chopped tomato
  • 1/4 cup (50 mL) thinly sliced red onion
  • 1/4 tsp (1 mL) black pepper
  • Directions
  • 1.

    Put Italian-style flatbread on a pizza pan; spread evenly with pesto. Top pesto evenly with about half of the crumbled feta cheese, then sliced mushrooms, chopped tomato and thinly sliced red onion. Sprinkle with black pepper.

  • 2.

    Scatter the another half of crumbled feta evenly over vegetables.

  • 3.

    Bake in a 450ºF (230ºC) oven for 12 to 15 minutes, until feta starts to brown. Cut into wedges to serve.
