Cauliflower and cheese sauce gets dressed up with the addition of eggs and ham.

Ingredients
  • 6 cups small cauliflower florets (1.5 L)
  • 1-1/2 cupsmilk (375 mL)
  • 1/4 cup all-purpose flour (50 mL)
  • 2 tbsp butter, cut into pieces (25 mL)
  • 1 tbsp chopped fresh dill (15 mL)
  • 1/2 tsp salt (2 mL)
  • 1/4 tsp black pepper (1 mL)
  • 2 tbsp Dijon mustard (25 mL)
  • 4 hard-cooked eggs, shelled and chopped
  • 2 oz chopped cooked ham (50 g)
  • 2 tbsp freshly grated (25 mL)
  • Parmesan cheese
  • 1 tbsp dry bread crumbs (15 mL)
  • Directions
  • 1.

    Bring a large saucepan of water to a boil over high heat; add cauliflower. Return to a boil; reduce heat to medium-low.  Simmer, covered, for 3 to 5 minutes, until cauliflower is tender. Drain well; set aside.

    In the same saucepan, whisk together milk, flour, butter, dill, salt and pepper over medium-high heat. Bring to a boil, whisking constantly. Reduce heat to medium; simmer, whisking constantly, for 2 minutes, until sauce is smooth. Whisk in mustard.  Gently stir cauliflower, hard-cooked eggs and ham into sauce.

    Spoon into an 11- x 7-inch (2-L) baking dish.

    In a small bowl, stir together Parmesan cheese and bread crumbs; sprinkle evenly over cauliflower mixture. Put dish in centre of oven under hot broiler; broil for 6 to 9 minutes, until golden brown and bubbly.
