Pineapple Mint Salsa

This versatile topping is great on grilled pork too.

"The pineapple mint salsa was delicious with the chicken patties. Celeste liked the burger but only with the salsa. It would be easy to switch up a few ingredients and make this burger more picky-eater friendly." —Nina Nuernberger, mom of Celeste, 7, and Amalie, 6, Nanaimo, B.C.

Ingredients
  • 1 cup chopped pineapple
  • 1 tbsp. finely chopped mint
  • 1 tsp. lime juice
  • 1 tbsp. olive oil
  • 1/4 cup finely chopped shallots
  • 2 tbsp. finely chopped red pepper
Directions
  1. Mix all ingredients together and chill until ready to serve. If making in advance, add mint just prior to serving.
