1 1/2 cups
- 1 cup chopped pineapple
- 1 tbsp. finely chopped mint
- 1 tsp. lime juice
- 1 tbsp. olive oil
- 1/4 cup finely chopped shallots
- 2 tbsp. finely chopped red pepper
Mix all ingredients together and chill until ready to serve. If making in advance, add mint just prior to serving.
