Ingredients
  • 1 tablespoon cornstarch
  • 1/2 teaspoons each salt and pepper
  • 4 boneless, skinless chicken breasts (tenders removed)
  • 1 egg, lightly beaten
  • 1 Cup panko breadcrumbs
  • 1 Cup finely chopped pecans
  • 2 tablespoons butter
  • Directions

    In a shallow dish, whisk together cornstarch, salt and pepper. Dredge chicken breasts in mixture to coat completely, shaking off any excess.

    Pour egg into shallow dish. Dredge chicken to coat completely.

  • 3.

    Stir together panko crumbs and pecans to combine. Coat chicken pieces.

  • 4.

    In a large skillet, melt the butter over medium heat. Add chicken pieces to pan in a single layer. Cook, turning once, until golden brown and cooked through; about 20 minutes.

  • 5.

    Transfer to a platter and serve warm.
