Nana’s Mushroom Rice

Ingredients
  • 1/2 pounds unsalted butter
  • 3 Cups finely diced onions
  • 2 Cups long-grain rice
  • 2 Cups quartered white mushrooms
  • 1 green pepper, diced
  • 3 tins beef consomme
  • 2 tins water, using empty consomme tins to measure
  • 2 teaspoons fresh oregano, picked and roughly chopped
  • Directions
  • 1.

    Preheat oven to 350 F.

  • 2.

    Melt butter in a large pot, add onions and cook until golden.

  • 3.

    Add rice and continue to cook until rice is also golden.

  • 4.

    Stir in mushrooms and green peppers, cooking for 5 more minutes.

  • 5.

    Place into a 9" x 13" baking dish and add consommé, water and oregano.

  • 6.

    Cover with aluminum foil and bake for 1 hour until rice is cooked through.
