Place lentils and water in a large saucepan and bring to a boil. Lower the heat and simmer, covered for 45 minutes. If you need to add more water, be sure that it is hot. Drain lentils, reserving the cooking liquid.
In a large saucepan, sauté bacon over medium heat for 2 minutes. Add chorizo and cook, covered, for 3 minutes.
Add onion and garlic and sauté for 3 minutes. Add lentils, pineapple, plantain, salt, and pepper and cook, covered, over low heat for 10 minutes.
Add 2 cups of the lentils' liquid and scallions; cover and cook over low heat for 30 minutes.
While the mixture is cooking, heat the oil in a skillet. Add the smoked pork chops and sauté for 3 minutes on each side. Place the chops in the pan with the lentils and cook, covered, for 5 minutes. Note
This should be more like a lentil casserole. If you prefer it less thick, add 1 cup water.
