Lemon Gnocchi With Arugula & Parmesan

One pot, one pan—it doesn't get any easier! We've kept this vegetarian but adding cooked chicken or sausage would be delicious.

Ingredients
  • 1/4 Cups extra-virgin olive oil
  • 2 teaspoons minced garlic
  • 1 package (500g) gnocchi
  • 1 Cup baby arugula, packed
  • 1/2 lemon, zested and juiced
  • 1/4 Cups shaved Parmesan
Directions
  1. Put a large pot of salted water on to boil. In a sauté pan, heat oil with garlic. Remove from heat before garlic starts to brown.

  2. Cook gnocchi in boiling water according to package instructions. Drain and add to sauté pan with oil and garlic. Gently stir to coat gnocchi with flavoured oil.

  3. Mix in arugula, lemon zest, juice and a good twist of cracked black pepper. Top with shaved Parmesan.
