Add quinoa to 2 cups of water and bring to a boil, cover and simmer on low heat for 20 minutes and then transfer to serving dish.
Add chopped herbs and vegetables to serving dish. Stir in the lemon juice and extra virgin olive oil, mix in the grated carrot and olives and season with freshly ground salt and pepper.
Set aside for up to 30 minutes before serving to allow the flavours to blend together.
