Iron Skillet Chocolate Chip Cookie

A classic favourite cookie gets a grown-up makeover with a new cooking surface and some sophisticated salt. The result is a gooey and soft middle with crispy bottom and edges. Cut into wedges and eat alone or serve warm, with a scoop of vanilla ice cream.

Ingredients
  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup sugar
  • 1/4 cup light brown sugar
  • 1/4 cup demerara sugar (or light brown sugar)
  • 1 1/2 teaspoons pure vanilla extract
  • 1 large egg
  • 1 3/4 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 cup semi-sweet or bittersweet chocolate chips
  • 11/4 teaspoons fleur de sel, optional
  • Directions

    Preheat oven to 350°F.

  • 2.

    In a large bowl, using an electric mixer, cream butter and sugars until light and fluffy. Add vanilla and egg, beating until blended.

  • 3.

    In a separate bowl, whisk flour, baking soda and 1-tsp salt until blended. Add to butter mixture and mix until just combined. Stir in chocolate chips. Spoon batter into cast iron skillet and press lightly to cover bottom of pan. Sprinkle top of dough with fleur de Sel, if desired.

  • 4.

    Bake on top rack of oven until edges of cookie are a pale golden brown, about 20-25 minutes. Let cool slightly before cutting into wedges or turning out onto a plate to serve whole.
