Ingredients
  • 1 bag shredded coleslaw mix (250 g)
  • 1 small red pepper, thinly sliced
  • 1 Cup bean sprouts
  • 1/4 Cups chopped cilantro
  • 1/4 Cups chopped peanuts
  • Indonesian Coleslaw Dressing
    Ingredients
  • 3 tablespoons rice vinegar
  • 3 tablespoons hoisin sauce
  • 2 teaspoons minced ginger
  • 2 teaspoons sesame seed oil
  • 1 teaspoon soy sauce
  • 1 teaspoon granulated sugar
  • 1 clove garlic, minced
  • Directions
  • 1.

    In large bowl combine the first 4 ingredients for the salad.

    In a separate bowl, whisk dressing ingredients together.

  • 3.

    Just before serving, pour dressing over salad, toss and sprinkle with peanuts.

    Nutrients per serving (based on 6 servings): 98 calroies, 5 g fat, 4 g protein, 3 g fiber, 12 g carbohydrates, 0 mg cholesterol, 161 mg sodium. Excellent source of vitamin C. Good source of folate.
