Indian Butter Chicken

Look for mild curry paste at the grocery store to keep things cool for any tender tongues. Most children love the creaminess of butter chicken and paired with steamed Jasmine rice and roasted vegetables, it makes for an easy meal. If you want to add a special touch, fry up some pappadums to dip in the butter chicken sauce.

Prep Time
Prep time: 5 minutes, In the slow cooker: 5 hours on low or 2 1/2 hours on high
Ingredients
  • 2 tbsp butter
  • 1 tbsp ground cumin
  • 2-3 tbsp yellow or red curry paste
  • 1 tbsp fresh ginger, minced
  • 1 cuptomato sauce
  • 3/4 cup coconut milk
  • 8 skinless, bone-in chicken drumsticks and thighs (approx. 3 lbs)
  • Directions
  • 1.

    Melt butter and pour in slow cooker. Stir in all ingredients except chicken.

  • 2.

    Season chicken with salt and pepper and add to sauce. Turn chicken to coat.

  • 3.

    Cook on high setting for 2 1/2 hours or low for 5 hours.

    NUTRIENTS PER SERVING (2 PIECES OF CHICKEN): 343 calories, 23 g fat, 42 mg calcium, 493 mg sodium, 8 g carbohydrates, 1 g fibre, 22 g protein. Good source of niacin.

      How large a slow cooker was used? This would affect whether or not the sauce actually could cover the chicken.
