Grilled Tequila and Lime Chicken Wings with Cilantro Yogurt Dip

Chef’s Note: If you don’t have a grill, wings can be baked in a 400°F oven. Arrange wings in a single layer on a rimmed sheet pan and bake until cooked through, about 20 to 25 minutes. Toss in reduced tequila lime mixture and finish under broiler until wings are caramelized.

Ingredients
- ¾ cup plain whole milk Greek-style yogurt
- ¼ cup finely chopped cilantro
- 2 tbsp fresh lemon juice
- ½ tsp ground cumin
- ½ tsp cayenne
- Kosher salt and freshly ground pepper
- 3 lbs chicken wings, split at joint, tips removed and discarded
- 2 tsp olive oil
- ⅓ cup fresh lime juice
- 1 tsp grated lime zest
- ⅓ cup tequila
- 2 tbsp honey
- 2 tsp minced garlic
- ¼ tsp crushed red pepper flakes, or more to taste
Directions
Preheat grill to medium-high heat.
Combine Greek yogurt, cilantro, lemon juice, cumin and cayenne and mix well. Season to taste with salt and pepper and chill until needed.
In a bowl, season wings with salt and pepper and toss in olive oil. Grill, turning often until wings are browned and cooked through, about 12 to 15 minutes. Try to keep grill closed as much as possible to cook evenly and prevent flare-ups.
Meanwhile, in a small saucepan set over medium heat combine lime juice and zest, tequila, honey, garlic and red pepper flakes and bring to a boil. Reduce heat to low and simmer until reduced by one-quarter. Toss cooked wings in lime mixture and let sit for 3 minutes. Return wings to grill and cook until sauce is caramelized, about 3 minutes.
Transfer to a serving plate and pour any remaining lime mixture over wings. Serve with reserved cilantro yogurt for dipping.
