French Toast Bake with Brown Sugared Peaches

This is a great option when kids declare they want to make breakfast: it involves no sharp knives and no hot skillets. This rich and indulgent treat can also be prepared the night before and baked first thing in the morning.

Ingredients
  • 4 croissants
  • 3 eggs
  • 1 cup milk
  • 2 tsp vanilla
  • 1/4 tsp salt
  • 1/8 tsp nutmeg
  • 1/4 tsp salt
  • 1 jar, unsweetened, sliced peaches (540 mL), drained
  • 1/4 cup brown sugar
  • 1 tsp cinnamon
Directions
  1. Grease a 9x13 pan. Tear croissants into bite-sized pieces and place them in a single layer in the pan.

  2. Whisk together eggs, milk, vanilla, salt and nutmeg. Pour over bread.

  3. Top with peach slices. Sprinkle with brown sugar and cinnamon. Cover with foil and chill in the refrigerator overnight.

  4. Preheat oven to 350-deg. F. Bake 30 minutes covered, then uncover and bake for an additional 10 minutes, until puffed and golden brown. Serve immediately with maple syrup.
