Chop apples and vegetables into approximately 1-inch squared pieces.
Sauté onions and apples in butter.
Cook all remaining ingredients with onions and apples in a slow cooker on low for 3 hours with a small of apple juice.
Serve.
Nutrients per serving (based on 5 servings): about 129 calories, 0 g fat, 2 g protein, 32 g carbohydrates, 6 g fibre, 37 mg sodium. Excellent source of vitamin A. Good source of vitamin B6.
