Fall Vegetable Roundup

Ingredients
  • 1 onion, chopped
  • 2 tart apples, chopped
  • 1/4 Cups butter
  • 1 acorn squash, chopped
  • 1 sweet potatoes, chopped
  • 1 Cup carrots, chopped
  • 1/4 Cups chopped parsley
  • 2 teaspoons thyme
  • 1 teaspoon rosemary
  • apple juice
Directions
  1. Chop apples and vegetables into approximately 1-inch squared pieces.

  2. Sauté onions and apples in butter.

  3. Cook all remaining ingredients with onions and apples in a slow cooker on low for 3 hours with a small of apple juice.

  4. Serve.
