Double Chocolate Biscotti

A chocoholic's delight. Great flavour, and nutty too. Not as hard as other biscotti.

Ingredients
  • 3 ounces semi-sweet chocolate
  • 1/2 Cups butter or margarine, softened
  • 1 1/2 Cups granulated sugar
  • 2 3/4 Cups all purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 Cups orange juice
  • 1/2 Cups semi-sweet chocolate chips
  • 2 eggs
  • 3/4 Cups almonds, coarsely chopped
  • 13/4 Cups chopped walnuts
  • 1 tablespoon orange rind (optional)
Directions
  1. Partially melt semi-sweet chocolate in microwave (approximately 2 minutes on medium). 

  2. Beat together butter, sugar, and eggs. Beat in melted chocolate and remaining ingredients except for chocolate chips and nuts. Add chocolate chips and nuts and stir batter by hand.

  3. Divide dough in half and form into a long log and place on a greased baking sheet. Repeat with second half of dough.

  4. Bake at 350F for 30 minutes. Cool 10 minutes. Remove from pan and, using a sharp knife, cut into 3/4-inch slices. 

  5. Return cookies to cookie sheet, cut side down.  Bake 20 minutes longer, turning cookies over once. Allow to cool before serving.
