Double Chocolate Biscotti

A chocoholic's delight. Great flavour, and nutty too. Not as hard as other biscotti.

Ingredients
  • 3 ounces semi-sweet chocolate
  • 1/2 Cups butter or margarine, softened
  • 1 1/2 Cups granulated sugar
  • 2 3/4 Cups all purpose flour
  • 2 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1/4 Cups orange juice
  • 1/2 Cups semi-sweet chocolate chips
  • 2 eggs
  • 3/4 Cups almonds, coarsely chopped
  • 13/4 Cups chopped walnuts
  • 1 tablespoon orange rind (optional)
  • Directions
  • 1.

    Partially melt semi-sweet chocolate in microwave (approximately 2 minutes on medium). 

  • 2.

    Beat together butter, sugar, and eggs. Beat in melted chocolate and remaining ingredients except for chocolate chips and nuts. Add chocolate chips and nuts and stir batter by hand.

  • 3.

    Divide dough in half and form into a long log and place on a greased baking sheet. Repeat with second half of dough.

  • 4.

    Bake at 350F for 30 minutes. Cool 10 minutes. Remove from pan and, using a sharp knife, cut into 3/4-inch slices. 

  • 5.

    Return cookies to cookie sheet, cut side down.  Bake 20 minutes longer, turning cookies over once. Allow to cool before serving.
