Dairy-Free Mac and Cheese

For those with dairy allergies or lactose intolerance, this quintessential comfort food is a distant memory. Our version relies on nutritional yeast and cauliflower for a smooth and creamy stand-in for the real McCoy.

Ingredients
  • 1/2 head (about 3 cups) cauliflower, cut into small florets
  • 1 lb macaroni or other pasta
  • 2 cups plain soy milk
  • 3/4 cup nutritional yeast
  • 3 tbsp cornstarch
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp dry mustard
  • 1 tsp dried parsley
  • 2 tbsp miso pastePepper to taste
  • 1/2 cup bread crumbs
Directions
  1. 1 Preheat oven to 350 F.

  2. Bring a large pot of salted water to a boil. Add cauliflower and cook until tender, about 6 minutes. Using a slotted spoon, remove cauliflower and add to a food processor or blender.

  3. Return pot to boil, and cook pasta according to package directions. While pasta is cooking, mix remaining ingredients together with cauliflower.

  4. Drain pasta, reserving about 1 cup of the cooking water, and return pasta to pot. Add the sauce mixture and cook, stirring, until mixture boils and thickens. (If pasta looks dry, add some of the pasta water back in.)

  5. Pour pasta into a greased baking dish (11x17-inch works well). Top with bread crumbs and spray lightly with oil for an extra-crispy topping. Bake for 15 minutes until topping is crisp and brown.

Nutrients Per Serving

299 calories, 5 g fat, 61 mg calcium, 927 mg sodium, 48 g carbohydrates, 8 g fibre, 18 g protein. Excellent source of folate, thiamine, niacin, potassium, selenium, manganese, phosphorus, and vitamins B2, B6 and B12. Good source of iron, magnesium and vitamin C.
