Ingredients
2 Cups quinoa*, cooked2 boneless, skinless chicken breasts, cooked and cut into bite-size pieces3/4 Cups thinly sliced dried apricots2 green onions, thinly sliced1/2 Cups toasted walnut pieces1/4 Cups chopped fresh cilantro2 tablespoons curry powder1/4 Cups rice vinegar1/3 Cups canola oil12 teaspoons grated, fresh ginger
Directions
1.In a bowl, combine first 6 ingredients.
2.In a separate bowl, whisk together curry powder, rice vinegar, canola oil and ginger until combined.
3.Drizzle over quinoa and stir. Season with salt and pepper.
