Peel apples if you like. Core and cut into thin wedges. Place in a medium saucepan along with lemon juice and 1/2 cup water. Set over medium to high heat. Cover and simmer gently to soften apples, 2 to 3 minutes. Drain. Add maple syrup and cinnamon to pan. Warm just before using.
Place eggs, Almond Fresh, sugar, salt and spices in a 9 x 3 inch baking dish. Whisk until blended. Add bread. Soak 5 minutes. Turn bread and continue to soak 5 more minutes.
Melt butter in a large non-stick frying pan set over medium-high heat. When butter bubbles, cook bread in two batches without crowding pan. Adjust heat as necessary. This will take 6 to 8 minutes in total, turning part way through, until golden brown on both sides. Keep warm in the oven while cooking second batch, adding more butter if needed. Divide among 4 plates, spooning maple syrup apples over top.
