Cinnamon Pecan French Toast Casserole

This is a terrific make ahead for busy weekend brunch. It will only look like you spent all morning at the stove.

Ingredients
  • 1/4 Cups unsalted butter, divided
  • 2/3 Cups packed light brown sugar, divided
  • 8 slices (3/4-inch) thick-sliced brioche or country bread, raisin bread would also work, cut diagonally into triangles
  • 8 large eggs, lightly beaten
  • 11/2 Cups milk
  • 1/4 Cups granulated sugar
  • 1 tablespoon pure vanilla extract
  • pinches salt
  • 3 tablespoons all-purpose flour
  • 1 1/2 teaspoons ground cinnamon
  • 11/3 Cups pecans, toasted, roughly chopped
  • maple syrup, for garnish, optional

  • 1.

    Preheat oven to 350°F if baking right away or skip this step if making ahead.

  • 2.

    In a small bowl, melt 2 tablespoons butter in microwave and combine 1/3 cup brown sugar. Spread mixture into the bottom of a 9x13 baking dish. ¨Arrange slices of bread in the baking dish overlapping as necessary.

    Combine eggs, milk, granulated sugar, vanilla and salt in a bowl and stir well; pour evenly over bread slices. ¨Wrap tightly with plastic wrap and let stand 30 minutes.

  • 4.

    Meanwhile, in a small bowl combine, remaining 1/3 cup brown sugar, flour and cinnamon and mix well. Use a knife or your fingers to incorporate remaining 2 tablespoons butter into dry mixture until it resembles coarse meal. Add chopped pecans and refrigerate until needed.

  • 5.

    Sprinkle crumb mixture evenly over top of bread and bake for 35 to 40 minutes or until puffed, golden brown and set. Remove from oven and let cool slightly before slicing and serving with a drizzle of maple syrup, if desired.
