Ingredients
  • 2 tsp sesame oil
  • 2 stalks lemongrass, very finely chopped
  • 2 large mild red chillies, seeded and chopped
  • 1 tbsp finely grated ginger
  • 500g (1lb) ground chicken
  • 3 tsp brown sugar
  • 3 tbsp lime juice
  • 3 tbsp fish sauce
  • 1/4 cup shredded mint leaves
  • 16 belgian endive or romaine leaves
  • Directions
  • 1.

    Heat a frying pan over high heat. Add the oil, lemongrass, chillies and ginger and cook for one minute.

  • 2.

    Add the chicken and cook, stirring, for 5 minutes or until the chicken is cooked through.

  • 3.

    Add lime juice, fish sauce, sugar and mint and stir well.

  • 4.

    Spoon the lemongrass chicken into belgian endive and serve.
