Chicken, Prosciutto and Asparagus Bundles

Ingredients
  • 1 pkg frozen puff pastry patties, thawed according to package directions
  • 6 slices prosciutto or ham
  • 3 small boneless skinless chicken breasts, cut in half lengthwise and pounded with a mallet
  • 12 asparagus stalks, trimmed to fit
  • 6 tbsp Boursin cheese or herbed cream cheese
  • 1 egg, whisked with a teaspoon of water
  • Directions

    Preheat oven to 425 °F and line a sheet pan with parchment paper; set aside.

  • 2.

    Roll individual pastry patties on a floured surface into 1/8th-inch thick rectangle shape. Top each piece of pastry with a slice of prosciutto (making sure to leave a border of pastry so that you can seal the bundle), a piece of chicken, a few pieces of asparagus and cheese. Starting at one of the short ends, roll up each bundle, folding in sides and sealing well. Set seam side down on sheet pan.

    Cover and refrigerate until ready to cook. (Can be prepped 6 hours in advance.)

    Just before baking, brush each bundle with egg. Bake for about 20-25 minutes or until pastry is golden brown.
