Cheesy Chicken and Broccoli Potato Boats

Twice-baked potatoes become the main course when you pack them with protein and vegetables. Round out your meal with a big salad. Double the recipe and take the leftovers for lunch the next day

Ingredients
  • 3 large baking potatoes
  • 2 cups trimmed broccoli florets
  • 1 tsp minced garlic
  • 2 boneless chicken breasts cut into small bite-sized pieces (1½ cups)
  • 1 tsp olive oil
  • 2 tbsp butter
  • ½ cup milk
  • 1 cup grated mild cheese, divided
Directions
  1. Preheat oven to 400°F.

  2. Pierce washed potatoes with a fork. Place 1 inch apart on paper towel in microwave oven. Microwave on high for 12 minutes, or until just softened, rearranging and turning over after half the cooking time. Let stand in oven for 5 minutes.

  3. Meanwhile bring a pot of water to a boil. Blanch broccoli for 4 minutes, or until tender, then drain and rinse with cold water.

  4. In frying pan over medium-high heat, sauté garlic and chicken pieces in oil until lightly coloured and cooked, about 5 minutes. Set aside.

  5. Cut potatoes in half lengthwise. Scoop out inside of potatoes, leaving enough potato to keep their shape. Mash scooped out potatoes with butter and milk. Mix in broccoli, ¾ cup of cheese and chicken. Set aside 1 cup for baby portion, season remaining with salt and pepper.

  6. Spoon portions of the mixture into five potato shells (mounding it up) and top each with remaining cheese.

  7. Arrange on a sheet pan or towel-lined microwaveable baking sheet. Bake in oven for 15 minutes or microwave on high for 5 minutes, or until heated through and cheese has melted, rotating halfway through.
