Cheese and Corn Quesadillas

Quesadillas are a popular "sandwich" and very easy to make. A recipe from Bonnie Stern's University Survival 101 Cooking Class.

Ingredients
  • 1 1/2 Cups grated cheese (mozzarella, smoked mozzarella, cheddar, swiss, etc)
  • 1 teaspoon pureed chipotles or one finely chopped jalapeno or any hot sauce - optional
  • 1 Cup fresh or frozen corn niblets or any diced cooked vegetable, optional
  • 1/4 Cups chopped fresh cilantro or fresh basil or green onions
  • 10 six inch flour tortillas
  • Directions
  • 1.

    Combine cheese with chilies, corn and cilantro.

  • 2.

    Arrange tortillas on work surface in a single layer. Spoon mixture on one half of each tortilla. Fold other half over filling and press together firmly.

  • 3.

    In a panini maker, grill pan or skillet, grill quesadillas about 1 to 2 minutes per side until cheese melts and tortillas are browned. Cut each tortilla in thirds. (You can also place these in a single layer on a baking sheet and bake in the oven at 400F for about 10 minutes until browned.)
