Ingredients
  • 60g (2 oz) rice flour
  • 1/2 cup (4 fl oz) iced water
  • 2 tbsp baking powder
  • 1 egg
  • 1/2 tsp ground cumin
  • 1 1/2 cups grated carrot
  • 1 1/2 cups grated parsnip
  • 1/4 cup chopped flat-leaf parsley leaves
  • sea salt and cracked black pepper (to taste)
  • 1/4 cup (2 fl oz) vegetable oil
  • 350g (121/2 fl oz) marinated goat's cheese
  • arugula leaves and cracked black pepper to serve
  • Directions
  • 1.

    Place the rice flour, water, baking powder, egg, cumin, carrot, parsnip, parsley, salt and pepper in a large bowl and mix to combine. Heat the oil in a large frying pan.

  • 2.

    Place tablespoons of the carrot mixture in the pan, flatten slightly and cook in batches for 1-2 minutes each side until golden brown.

  • 3.

    Serve warm topped with the goat's cheese, arugula and pepper.
