Bacon and Egg Pasta

Give pasta a break from tomato sauce and cheese with this delish combo known as pasta carbonara.

"This didn't require hunting for lots of ingredients, and my daughter said, “Mmmm…I love bacon.' Next time, I would add asparagus and maybe some cheddar instead of Parmesan to up the flavour."

Ingredients
  • 1 lb rigatoni
  • 1 pkg precooked bacon, chopped (14 slices)
  • 1/4 tsp crushed chili flakes
  • 1/2 cup 35% cream
  • 2 eggs
  • 1/4 cup grated Parmesan cheese
Directions
  1. Bring a large pot of lightly salted water to a boil. When water is boiling, add pasta and cook according to package directions. Drain, reserving 1/2 cup pasta water, and return pasta to pot.

  2. While pasta is boiling, sprinkle bacon with chili flakes and microwave for 60 seconds, until just crisp.

  3. Whisk together cream, eggs and cheese. Add bacon and the cream mixture to pasta and toss to coat. Add some reserved past water to help loosen the sauce. Top with fresh ground pepper and serve with extra cheese.
