Asian Nappa Cabbage Slaw

Ingredients
  • 1 head of nappa cabbage, washed, dryed, core removed and sliced finely
  • 1/2 Cups slivered almonds
  • 1/4 Cups sesame seeds
  • 1 package of ramen noodles (noodles only, toss the flavour packs)
  • 1/2 Cups olive oil
  • 1/3 Cups balsamic vinegar
  • 1/2 teaspoons salt
  • 1/2 teaspoons pepper
  • 1 tablespoon pure sesame oil
  • 1 teaspoon dijon mustard

    Sesame Balsamic Dressing

    In a container with a tight fitting lid, mix the olive oil, balsamic vinegar, salt, pepper, pure sesame oil, and Dijon mustard. Close the container tight and shake vigorously until the dressing has come together (emulsified).

    Arrange the clean, dry Nappa cabbage in a pretty bowl. Add 1/3 cup of the Sesame Balsamic dressing to the cabbage. Stir until the cabbage is fully coated in the dressing. If the salad looks dry, add more dressing to taste. Sprinkle the slivered almonds over the slaw. Sprinkle the sesame seeds over the slaw. Use your hands to break up the dry Ramen noodles and then sprinkle them over the slaw.
