Apple Brown Betty

Ingredients
  • 1/3 Cups granulated sugar
  • 1/3 Cups packed brown sugar
  • pinches salt
  • 1/4 Cups all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoons ground nutmeg
  • 2 teaspoons fresh lemon juice
  • 1 vanilla bean
  • 6 Cups peeled apple slices
  • 13 teaspoons unsalted butter
  • 1/2 Cups breadcrumbs
Directions
  1. In a large bowl, combine sugars, salt, flour, cinnamon, nutmeg and lemon juice. Use a sharp knife to slice the vanilla bean in half lengthwise. Separate the seeds from the outside skin by scraping the blade of the knife along the inside of the bean. Add the seeds to the mix.

  2. Mix in apple slices, stirring to coat apples. Spoon into 2-quart microwaveable casserole dish.

  3. Melt butter in microwave and mix with breadcrumbs and a pinch of cinnamon. Sprinkle over apple mixture and cook on high in the microwave for 10-14 minutes or until apples in centre are tender, turning the dish once.

  4. Let stand for 2 minutes and serve. Great with whipped cream or vanilla ice cream.
