Our last no-bake chocolate cookie suggestion was such a hit, we know that we’re not alone in our desire to get a break from the heat—without sacrificing those tasty snacks that we enjoy so much. So, we’ve decided to share another one! This recipe comes courtesy of our sister site, 20 Minute Supper Club. Not only are these cookies super quick and easy to make (20 minutes!), but they’re also very tasty (which we know from personal, um, “research”). Pair with an ice-cold glass of milk for a perfect mid-afternoon treat on a hot summer day.

• Quick-cook rolled oats
• Crushed pistachios
• Shredded unsweetened coconut
• Vanilla extract
